Like black metal, I listen to very little of this genre apart from the standard couple of classics I already have, such as Deicide and Cannibal Corpse.
Atonal blasting sounds good, though I would veer more towards grind such as Last Days of Humanity if that's what I fancied.
Who would people list as the real five, maybe ten, must own bands of this genre? Death, Obituary, Morbid Angel?
Plenty of other bands with classic albums - Massacre, Unleashed, Carnage, Grave, Merciless, Winter, Slaughter, Necophagia, the first Darkthrone etc etc.

Lots of Master, Cancer, and more recent stuff like Bloodbath and Decrepit Birth. I wish there was more stuff like the first two Cancer, they're great for the simplistic pieces of death metal they are. I love the heavier parts off of Death shall rise, great band that should get a lot more spins.
